Prep Time 30 mins
Ingredients (can be free-styled depending on what you have)
- Olive oil
- Spring Onions
- Basic Seasoning
- Prawns or any thing nice to garnish.
Peel the potatoes and cut to smaller chunks so it cooks faster.
Wash the peeled potatoes, add some water, salt to taste and it cook for 20 25 minutes.
Heat a clean pan and add 3 TBS of olive oil, chop the tomatoes and spring onions in to the pan.
Stir fry for 5minutes, add the prawns or any garnish you wish followed by the basic seasoning, (maggi, salt, thyme, curry, basil, anything nice but not too much)
Reduce the heat and break the eggs straight into the stir fry without whisking. Mix this up and allow to cook for about 10 minutes or till preferred then set aside.
Once the potatoes are cooked, remove excess water then mash it till its all mixed up. you can add butter or cream if you like. Sprinkle some herbs, and serve with the egg sauce. Enjoy!!
