Frittata

Frittatas are nice plus really colourful. Its another lovely way of enjoying egg especially if you are bored of scrambled eggs and omelets. Please read on to see how you can make yours.

 

 

 

 

Ingredients

Eggs (4 or more)

Basic seasoning ( salt, peppers etc)

Veggies (Any you can get, bell peppers, cucumbers, mushrooms, herbs etc)

Spring Onions (any will do just fine)

For non veggie option, (shrimps, prawns, chopped chicken, meat etc)

Olive or any type of oil.

Method

Dice your veggies on to a non-stick baking pan seasoning it with the basic seasoning as prefered. salt, black pepper, ground pepper etc. a little bit of olive oil (1- 2 tbsp) and off to the oven to bake for 8 mins.

Heat up the fry pan with 2 tbsp of olive oil, chop some spring onions. and sear it for about 1 min.

For a non veggie option, throw in your prawns, chopped chicken, meat etc.

Add the roasted veggies to the seared onions.

In a bowl, whisk 4 eggs or more into the fry pan with the veggies mix it up, lower the heat cook for 8 mins, once the top is almost set, sprinkle some cheese if you like, pop the pan into the oven and cook for 2- 3 mins until firm and golden.
