Gizdo is a foodie slang for gizzard and dodo (plantain). Nice and lovely light meal. You have to taste it to understand trust me. Not to worry its quite easy to make with few ingredients. The main is to sought out the Gizdo condiments then you just wrap it up. Are you ready? Lets do this.
Ingredients
- Gizzard (any bird will do)
- Plantain (as much as you like.. you are in control)
- Bell peppers (coloured)
- Scotch bonnets or chillies (any is fine, what is required is the hot sensation)
- Tomatoes (Chopped)
- Onions (red, black, white, ..any how you want it lool)
- Tortilla wraps (or nan bread or normal bread …….just freestyle it’s not physics)
- Olive Oil (I prefer to use this but hey…dont stress, use what you can get)
Method
Cook or grill the gizzard with basic spice and everything nice. No hassle on this, salt, pepper, chillies, herbs and onions would do. Allow it to cook or grill till tender except you wanna feel that crunchy munch sensation in your wrap.
While that’s cooking, peel and cut the plantains to desired shape, preferably to cubes for easy mixing with the gizzard and stuffs.
Spread plantain on a baking pan, drizzle with 2 tablespoon of olive oil, add some basic, seasoning, spice and salt to taste if necessary. Then grill on low heat for 30 mins.
Alternatively fry the plantains on a hot pan with very little oil.
Now chop your scotch bonnets aka atarodo into fine pieces, if you prefer them smooth, you can blend, add tomatoes to reduce the heat. Or better still use chopped chillies, dry or ground pepper.
Heat up a clean pan and add 2 tbs of olive oil, spoon in the cooked gizzard and stir fry for about 3 mins depending on quantity, add the scotch bonnets or your preferred pepper, throw in some garlic or freestyle as you wish.
Add the plantains to the mix, spice it up with basic seasoning, throw in your sliced bell peppers, and onions stir gently and thats it.
Allow to cool and serve gently on your tortilla wrap, roll up and give it a munch.
